in the kitchen: easy baked chicken

this past weekend was super busy - we didn't even make it to grocery store! so last night i wanted to think of a different way to prepare chicken, something a little more fun that our go-to bbq. so i did an easy, semi healthy, lightly breaded, toaster oven baked chicken breast.  i made this recipe up, so if you are going to try it, feel free to add or leave out whatever you please.

ingreidents:
3 chicken breasts
1 egg white
about 1/2 cup seasoned bread crumbs
Parmesan cheese

1. lightly scramble your egg white and place it in a shallow plate. also place your breadcrumbs in a shallow plate.

2. take your chicken breast one at a time and dip them first in the egg whites, then in the bread crumbs until completely covered.

3. place in a foil lined & sprayed toaster oven pan. at this point i sprinkled some of my favorite spices on the chicken, as well as a little bit of Parmesan cheese; this is, of course, optional! put in the toaster oven at 350* for about 15-20 minutes.

4. i always check the temperature to make sure my meats are completely cooked through.  when finished cooking, enjoy!

i topped the chicken with a little bit of shredded cheese & served it with brown rice and sauteed green beans.
